Cooking with Kelly: Breakfast bite


I'm not much of a morning person, hence, I'm not a big breakfast eater. Usually, I have a piece of fruit to go or a bowl of cereal. After dragging myself out of bed, I don't want to sacrifice any time that I could have been sleeping making something to eat.


And then the weekends roll around. Inundated with the gift of time, I like to try different things. I was inspired by this New York Breakfast preparation by Ellie Krieger on her show, Healthy Appetite.


Because I don't like salmon, I went with my own combo. What you see is toasted whole-wheat sour dough break (yum!) topped with light cream cheese, fresh local tomatoes, carrot shreds and sliced cucumbers. It tasted delicious and gave me a little extra something with the crunch of the cucumbers and freshness of the tomatoes. Plus, I don't feel guilty about the carbs from the bread and the fat from the cream cheese since I had some veggies too. Happy weekend eating!

Dude! I had something almost similar this morn (my standard wknd breakfast... and, like you, during the week it's just a yogurt and piece of fruit, but when wknd comes and i have time i like to do big breakfast things... today's was just a quick standard): wheat bagel, light cream cheese, slice of tomato, slice of deli-style provolone cheese melted on top. YUM!

Mmmm, I am not a morning person either. A cup of coffee does me.

I could easily have your breakfast bite around 10am - morning tea. :)

This looks and sounds like a breakfast I would enjoy too. Bread doesn't "count" as carbs in my books because it has immunity. LOL! Can you tell I love bread?

For me, a little bit of smoked salmon mixed in would make this absolutely perfect. I'm not much of a breakfast person, either, but for a yummy meal like this I would definitely get myself to the table!

Uh huh, I like the compromise - cream chees is okay, we have tomatoes and cucumbers :) hey, I am not judging, just teasing. Sandwich looks good.

its sound good Kelly, when i was in Indonesia we ate rice for breakfast, but now i can enjoy sandwich to start my day :)

i on the other hand am a huge breakfast fan and refuse to start the day without it. this looks delicious. i did this on sundried tomato bagels in years past. toasted. the best. simly delicious.
