Cooking with Kelly: POMtail

I've been meaning to post this for at least a week ... I need better time management skills. Or a maid.

So a few weeks ago, the people at POM Wonderful sent me a case of their brand of pomegranate juice. I can honestly say I don't have a ton of experience with pomegranate juice; it wasn't something we drank as kids. And with our frugal food budget, it's not something I see at ALDI.

I was super excited to get this case and couldn't decide what to do with it first. So I had a little cocktail get together with some classy ladies for the sole purpose of serving a POMtini, POM gimlet or POMargita.

We decide on a POM spritzer type of cocktail. It wasn't overwhelmingly boozy but it was super tasty. And I hear pomegranates are great for your health -- you can learn more about all the antioxidant, heart-boosting benefits here.


In the meantime, here's the cocktail I worked up:
2 small bottles of POM
1 bottle champagne
1 large bottle sparkling water (I used lime flavored, but it's up to you)
2 limes, sliced into wedges
2 shots (2 ounces) light rum

Start with the ingredients chilled. Mix all ingredients together in a pitcher except for the champagne, which you should wait to add until right before serving. I served these in short juice glasses, but to make it fancy, it would look very pretty in martini glasses with sugared rims and a lime twist.
