Cooking with Kelly: Green Monster Shake

OK, right off the bat, this doesn't look pretty. Sorry. Some things in life aren't. It does, however, taste fantastic and is really great for you.

A green monster shake combines some type of greens, most commonly spinach, with fruit juice, fruits or yogurt to mask the taste of the greens. I like green monster shakes because they help me get a lot of different fruits and veggies in one snack, usually for less than 300 calories. At this point, I'm trying to eat around 300 calories about every three hours, so this fits the bill.

Here's my favorite concoction:

1 large banana in chunks

1 cup frozen strawberries

1 cup packed fresh baby spinach

4 ounces pure orange juice (not from concentrate)

Pulse together in a blender or food processor until well incorporated. For 240 calories, you get 60 percent of your daily value of Vitamin A, a third of your folate, 45 percent of your magnesium and 200 percent of your Vitamin C! And I promise, you can't even taste the spinach.
