Stand Mixer Sunday: Healthier oatmeal raisin cookies

Remember when the Cookie Monster on Sesame Street used to love cookies, before he told us that cookies are a sometimes food and carrots are a better choice? While I think that Cookie Monster prefers chocolate chip cookies, these oatmeal raisin cookies have been health-ified so that maybe cookies can move out of the sometimes category.


By swapping out some sugar and butter, you end up with a tasty treat that's better for your waistline. Here's how it works out:


Oatmeal Raisin Cookies

1/4 cup butter
1/4 cup unsweetened applesauce
1/2 cup packed brown sugar
1/8 cup sugar
1/8 cup Splenda
1 egg
1 teaspoon vanilla
3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups oatmeal
1/2 cup raisins

Cream together the butter, applesauce and sugars using a stand mixer on medium with the flat mixer attachment. Add the egg and vanilla, then the remaining dry ingredients slowly with the mixer on low. Form small cookies and bake for 12-18 minutes in a 350-degree oven. This recipe should make about two dozen cookies.
