So here's what you need:
2 sticks of butter, room temp
1.5 cups brown sugar
1 teaspoon vanilla
1.75 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips
Using a stand mixer on low with the whisk attachment, cream the butter and sugar. Then add the eggs one at a time. Switch to the flat paddle attachment, then add the vanilla. Add the flour slowly before the salt and baking soda. Lastly, add the chocolate chips. This is what your dough will look like. The next part of the process is easier if you chill the dough for two hours. Essentially, make a hamburger, except instead of a bun, you use the cookie dough, and instead of meat, you use an Oreo. Hmmmm, delicious. These will make rather large cookies. They'll look like monsters. Delicious, gooey monsters.
Make sure to seal the top cookie and bottom cookie around the Oreo. Bake at 350 degrees for about 12 minutes, or until they're golden brown.

In the interest of full disclosure, I did use a small, round cookie-cutter to make these look so darn perfect. Try as I might, these cookies just kept spreading in the oven. A bit like how I can feel my ass doing right now. Back to the basement for more Insanity. Forgive me, Shaun T, I have sinned!
