Cooking with Kelly: Crock Pot Oatmeal Recipe

This nutritious breakfast was brought to you by the crock pot, which was doing all the work while I slept. I heard that steel cut oats were awesome and I should give it a try, but as much as I love breakfast, I'm not going to get up on a weekday so I can stand in front of my stove for 40 minutes. Enter, the crock pot.

I have this really cute 1.5 quart model that my mom bought me for a party. It was the perfect size for this recipe and allowed me to whip up at least six breakfasts, all at a cost of about $.50.

When I got up in the morning, I just unplugged the crock pot, stirred the oats and let them thicken while I got ready. The result was creamy oats that were still a bit al dente, which I enjoyed. We'll be using the leftovers for the rest of the week with different add ins.

Crock Pot Steel Cut Oats Recipe
1 cup steel cut oats
4 cups water

Add items to a 1.5-quart crock pot. Turn to low and leave overnight, about nine hours. Serve with sliced apples, raisins, milk, bananas, nuts or strawberries.

This sounds delish! I have to pick up one of those mini crock pots. I Like my overnight oats with some peanut butter and dark chocolate chips. Yummmmm

My mom makes a huge batch of steel cut oats (on the stove top) on the weekends and then reheats them throughout the week. They are SO good. I need to actually write down the recipe and then recreate them at home. Maybe I could cut corners and make them in the crockpot, too :-)
