Cooking with Kelly: Chocolate Buttermilk Cookie Recipe

Cookies always brighten my spirit. I love heading to the kitchen to craft a new cookie recipe, knowing that I'll get to share a delicious creation with friends and family who will surely appreciate my efforts.

Last week, I made cookies for my parents and their helpers during the great move out.  These chocolate buttermilk cookies were a huge hit. The texture was velvety and the chocolate flavor hit several notes thanks to the inclusion of both cocoa powder and semi-sweet chocolate chips.  The buttermilk added a slightly bitter note, which was great with the sweetness of the sugar.

I know buttermilk sounds weird for cookies, but give it a try.

Chocolate Buttermilk Cookie Recipe
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter
3/4 cups unsweetened cocoa powder
C is for Cookie and Cookies are for Me ... 
2 cups white sugar
1 teaspoon vanilla extract
2/3 cups buttermilk *
2 cups semi-sweet chocolate chip

* If you don't have buttermilk, place one Tablespoon vinegar or lemon juice in a measuring cup. Fill with milk, then set aside for five minutes. Measure as prescribed.

Start by whisking together the flour, soda and salt.

Melt the butter in a large bowl in the microwave until liquid. Whisk the cocoa into the melted butter until smooth, then whisk the sugar, vanilla and buttermilk until smooth. Add the dry ingredients in small portions until mixed together, then fold in the chocolate chips.

Chill the batter while the oven preheats to 350 degrees.

Place parchment over a cookie sheet, then portion out 1-Tablespoon sized cookies onto the sheets about two inches apart from each other.

Cook for 12 minutes or until the edges are set. Remove from the oven and allow to cool on the baking sheet for two to five minutes, then remove to a cooling rack.

Buttermilk would add a unique flavour to these cookies. I will give it a try when I share cookies.

I've never baked cookies with buttermilk, how interesting! I must try these...anything chocolate is always worth trying :)
