Now that my garden is coming up all lettuce, I've been having a salad with every meal. I don't see the issue with this as I try a different salad each time and eat a variety of lettuce types. I think I have four or five types of lettuce in my square foot garden. This salad combination is perfect and I end up eating a few times per week.
Homemade Greek Salad
1 cup lettuce or spinach
1 small tomato, chopped
1/2 zucchini, chopped (I grilled mine first)
Calamata or black olives, halved ( I go with three to four)
Red grapes, halved (Again, three or four do it)
Sprinkle of feta cheese
Combine ingredients in a small bowl and enjoy immediately. I also pack this in a tupperware container with a paper towel to absorb the moisture so it stays crisp until lunch.
