Cooking with Kelly: Chia-Laced Cinnamon Raisin Granola Recipe

Chia is the new black in the cooking world. It's a superfood that has the ability to cleanse your body and energize your workout, so the claims go. I like the flavor and bought a two-pound bag at Costco, so I need to find uses for these little guys. This granola recipe is delicious and nutritious.

Chia-Laced Cinnamon Raisin Granola Recipe
1 cup old-fashioned oats
2 Tablespoons chia seeds
2 Tablespoons raisins
1/2 teaspoon cinnamon
2 Tablespoons honey
1 Tablespoon canola oil

Mix together the cinnamon, raisins, oats and seeds. In a separate bowl, whisk together the oil and honey, then pour over the oat mixture. Stir to combine. Spray a roasting pan with oil, then spread the mixture onto the baking pan and bake at 350 degrees for about 22 minutes or until brown and crunchy.

I'm going to try this. I have an "un"healthy obsession with granola so this is probably a bad idea but I'm going to make this tonight or tomorrow. Try not to laugh but where can I get the Chia seeds? And please don't tell me on the self next to the PB2 that I can't find in my area. :o)

Ha! I got mine from Costco and it was in with the baking supplies. Bob's Mill also packages some, so you may be able to find it at a larger supermarket by the fancy flours. You can also order it online, which is how I get my 1-pound bags of PB2.

Awesome! I'm going to stop tonight and see if I can get some of the Bob's Mill. I think I know a store that carries that brand. Thank you! And I still want the PB2 was just too cheap to pay that shipping fee. I'm going to get some, considering a road tip toward Schamburg for that and a few other things.

Oh, and I didn't comment yesterday b/c I read most posts on my phone and its a PITA to comment but you look totally bad axx in the TRI suit! You are going to kick butt at your TRI!
