Cooking with Kelly: Perfect Low-Calorie Protein Pancake Recipe

Happy birthday, baby sister! Today, Katie is 20. And I am officially old.  I hope her morning started out as amazing as mine.

Breakfast is the most important part of the day, and I like to start the day with a lot of protein. It keeps me full, fuels my muscles and keeps my mind sharp to power through the day. At least in theory, but either way, this breakfast is a delicious, low-calorie take on pancakes. This protein pancake recipe works out to be roughly 300 calories for the whole shebang, and about 35 grams of protein. I like my protein cakes with peanut butter and dipped in a tad bit of syrup, just for flavor.

Low-Calorie Protein Pancake Recipe
4 egg whites
1 scoop vanilla protein powder
2 Tablespoons flaxseed meal
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon

Whisk the egg whites until they are slightly foamy. Add the remaining ingredients and stir to combine. Spray a large skillet with vegetable oil and heat to medium high. Pour two Tablespoons of batter into the skillet.

Depending on the size of your skillet, you can most likely cook three pancakes at a time.
Wait until bubbles appear across the surface of the pancake. Flip, cooking until remaining side is golden brown.

This recipe makes six pancakes.

So, is that 300 calories for six pancakes? Because, if so, I am TOTALLY making these the next time I have a pancake craving.

Yes indeed they are! Technically, I could have split them with Tim. If I was a nice person or whatever.
