Cooking with Kelly: Shrimp Fried Quinoa

I like takeout as much as the next kid, but it can be pricey and not so healthy. The great thing about making over your favorite fast food options is that you know exactly what's in it. Chances are, it will be healthier than the original and you'll definitely get to add everything you like.

Chicken fried rice is probably my favorite takeout item, so I set out to make shrimp fried quinoa today to up the protein and reduce the carbs (even if just by a little). This makes four generous portions, so I know what I'll be having for lunch tomorrow.

Shrimp Fried Quinoa
1/2 Tablespoon vegetable oil
1 egg
1 egg white
2 carrots, peeled and chopped
1/4 onion, diced
1 garlic clove, pressed
1/2 Tablespoon Asian seasoning
1/2 Tablespoon garlic powder
1 cup quinoa, cooked according to package instructions
2 Tablespoons low-sodium soy sauce
1/2 Tablespoon teriyaki sauce
3/4 pound small cooked shrimp
1 cup frozen peas

Add the oil to a large skillet and heat to medium-high heat. Scramble the egg and egg white, then cook in the skillet until set. Remove and set aside. Add the carrots, onions, garlic clove, Asian seasoning and garlic powder and saute vegetables until soft. Add quinoa, then stir to combine. Add sauces and egg, stir, then add the shrimp and peas. Cook until just heated through, about three minutes.
