Three Things Thursday

Busy, busy day. Here's what I've been up to:
1. Thanks to an e-mail exchange with Kim, I'm getting recommitted to my diet. The past few weeks have been a bit disastrous, with the weight at the end of January there as proof. If I'm going to reach my weight-related 12 Goals for 2012, I need to stop snacking/binging and eat smart for the next two months.
One of my many weaknesses ... 

2. Life with Belle the Bike is fantastic. I've taken two rides this week, thanks to the fantastic weather. The first was kind of disappointing, because I realized I had no idea how to shift gears. With some help from Amanda and Professor YouTube, my second ride was so much better. I completed just a little less than seven miles in a half an hour.

3. I might be crock pot obsessed. I made crock pot vegetarian chili and crock pot Southwestern chicken. Currently, I'm prepping to make stuffed peppers in the crock pot and have grand plans for a lentil stew. There's no cure for this addiction, btw.

Yes, but what a great addiction!

Question ... what do you do if you will be gone longer than 8 hours? Don't most recipes say to cook on high for 3-4 hours or low for 6-8? What if you are gone for 10 hours?

I go through insane periods of crock pot obsession! and I need to start watching my diet- I have a May deadline!

Oh man, I'm so jealous of you being able to ride outside! By the time I get home from work it's way too dark.

My crock pot has a digital clock so it automatically switches to warming after the time is up. Another option is to plug it into a time so that it will switch off when the time ends on the timer.
